To buy a jar of vegan mayo is easy. To make it yourself is just as easy. And even cheaper.
Since I rarely use mayo it doesn’t make sense to buy a whole jar and watch it go bad. I sometimes add a teaspoon in a salad dressing or spread some on a sandwich. Except when I have fries. Then I use a heaped tablespoon full of mayo to celebrate this fries-party.
With this recipe you can prepare some mayo just when you need it, since it takes only 2 minutes to make. It contains only a few ingredients that you’ll probably have at home.
- 50 ml (3 tbsp) soy milk
- 100 ml (6 tbsp) oil
- 1 1/2 tsp herb vinegar
- 1/2 tsp sugar
- 1/4 tsp salt
- Blend all ingredients in the Personal Blender or any other blender until solid. It takes between 10 and 30 seconds.
- Pour the mayo in a srew top jar and store in the fridge. Use within 1 - 2 weeks.
