Spicy Spaghetti alla Puttanesca with Cashew Parmesan

Spicy Spaghetti alla Puttanesca with Cashew Parmesan

I have a thing for spicy noodle sauces. A freshly cooked bolognese infatuates me just with its smell, while it is simmering on the stove.

This Puttanesca Sauce is just like that. I could take a bath in it. To make it vegan, I omit the anchovies, which are in an original Puttanesca and season it well with salt instead.

The olives come from a mix. They are marinated in herbs, garlic and oil. Also some capers are in the mix. So this is perfect for a Puttanesca. I bought this olive mix.

A glass of Sontino Sangiovese with this dish makes it perfect!

Love,

Rina

  • 1 pk. (1 cup) marinated olives
  • 1 hand full cherry tomatoes
  • 1 small can chopped tomatoes
  • 2 tsp pickled capers with juice

  • 2 tbsp cashews
  • 2 tbsp nutritional yeast flakes
  • 1/4 tsp salt

Zubereitung/Instructions
  1. Finely chop the onion and garlic, halve the cherry tomatoes. Heat a deep pan (or wok pan), bring a pot of water to boil.

  3. Add the cherry tomatoes to the pan and fry for 1 - 2 minutes. Deglaze with the canned tomatoes, stir in the capers and sambal ulek. Season well with salt and pepper. Let simmer until the noodles are done.

  4. For the cashew parmesan grind all ingredients in the Personal Blender or pestle in a mortar.

  5. Drain the noodles and pour them into the pan. Mix with the sauce and arrange on two plates. Sprinkle with cashew parmesan.
