I found an eggplant in the depth of my fridge which was past due. Is there anything better to do with such an eggplant than a delicious caponata?

I could take a bath in this delicious, sweet and sour dish…

Aromatic Caponata
Gang/Type: Main Dish
Ergibt/Yield: 2 Servings
  • 1 big eggplant
  • 2 hands full cherry tomatoes
  • 1 onion
  • 1 clove garlic
  • 2 tbsp capers
  • 2 tbsp basil, chopped
  • 2 tbsp olive oil
  • 2 tbsp herb vinegar
  • salt
  • pepper
  1. Cube the eggplant and onion, quarter the cherry tomatoes and chop the garlic.

  2. Combine all ingredients in a pot and season with salt and pepper. Simmer on medium heat for about 30 minutes, stir occasionally.

  3. Season to taste with salt and pepper and serve with fresh baguette.
