I found an eggplant in the depth of my fridge which was past due. Is there anything better to do with such an eggplant than a delicious caponata?
I could take a bath in this delicious, sweet and sour dish…
- 1 big eggplant
- 2 hands full cherry tomatoes
- 1 onion
- 1 clove garlic
- 2 tbsp capers
- 2 tbsp basil, chopped
- 2 tbsp olive oil
- 2 tbsp herb vinegar
- Cube the eggplant and onion, quarter the cherry tomatoes and chop the garlic.
- Combine all ingredients in a pot and season with salt and pepper. Simmer on medium heat for about 30 minutes, stir occasionally.
- Season to taste with salt and pepper and serve with fresh baguette.
