Ok, this recipe isn’t for you if you have an important appointment the next day, have to go to the dentist or if you’re going on a date… But any time else you should try this dish!
It is ridiculously easy and almost makes itself. You just need to mix the marinade and apply it on the butternut squash. The rest is done by the oven.

- 1 small butternut squash
- 4 cloves garlic
- 2 hands full basil
- 2 tsp olive oil
- 1/4 - 1/2 tsp salt
- Preheat the oven to 200 ° C (390° F).
- Halve the butternut squash lengthwise and remove the seeds. Cut it diagonally deep to make the marinade go deeper. Mix garlic, basil, oil and salt in a blender and apply it on the pumpkin.
- Bake in the oven for about 45 - 55 minutes until a fork gets in easily. The baking time depends on the size of the pumpkin. If it is getting too brown cover it with aluminum foil or parchment paper.
- I serve the baked butternut squash with hummus or tzatziki.
