Healthy Granola Cookies

Ergibt/Yield: about 12 Cookies
  • 1 big, ripe banana
  • 1 tsp vanilla extract
  • 75 g (3/4 cup) instant oats
  • 2 tbsp sunflower seeds
  • 2 tbsp buckwheat
  • 1 hand full dried cranberries, cherries, raisins or else
  1. Preheat the oven to 180° C (360° F) and line a baking tray with parchment paper.
  2. Mash the banana with a fork on a deep dish and mix with the vanilla extract. Then add the oats and mix and knead with the fork. At last add the sunflower seeds and buckwheat and mix in the dried fruits.
  3. Take a tablespoon full and put it on the baking tray. Form into cookie shape and firm a little by pressing with the spoon. Proceed until the mixture is used up.
  4. Bake in the oven for 12 - 15 minutes.
A little less healthy and more chocolaty: Omit the dried fruits and add some chocolate chips instead. You can make vanilla extract yourself. It's so easy.
